elite|studio e provided foodservice consulting services for this confidential client completely gutting a space that used to act as an office. Our team worked with the architect to transform this 5,836 SF space into a food hall with five stations and a 24/7 market.The shared kitchen, five individual concepts with self-sufficient capabilities, seating areas and La Colombe, the barista bar, opened in 2022.
Keeping in mind the goals provided by the architect and client, we implemented specific equipment suggestions. One example is the Food Works flex station. The flex wells have hot and cold capabilities, providing virtually unlimited flexibility to the operator. We also suggested an Evo Grill with integrated ventless downdraft and fire suppression systems. This allows patrons to have a visual of the chefs cooking, as well as the day’s menu options.
Operator brands fueled the inspiration for each station, creating unique destinations throughout the space. In collaboration with the architectural team, we carefully crafted the look and feel of each concept, from the elegant and classy Roots and Seeds, to the warm and artisan Butcher and Baker. The mix of finishes conveys the illusion of micro restaurants, expressing their own individual environment and ambiance, despite their closeness in proximity. and snacks, ensuring nothing left unnoticed.The elite | studio e team was able to deliver the design based on the client’s request for a “food hall feel”, while also realizing an elevated look.
